1. Cocoa Bean Cleaning

2. Roasting
 
Roasting reduces moisture, helps develop the characteristic cocoa aroma, and makes the cocoa shells easier to separate from the nibs. Roasting temperature and time need to be adjusted according to the cocoa bean variety, moisture content, and final product requirements.
 
3. Peeling
 
Roasted cocoa beans are cracked into smaller pieces to facilitate shell removal. Air separation is then used to separate the cocoa shells from the nibs, producing relatively clean cocoa nibs for further processing.
 
4. Grinding into Cocoa Liquor
 
The cocoa nibs are ground to release the cocoa butter contained in them. As grinding continues, the solid particles gradually form a fluid cocoa paste known as cocoa liquor. Cocoa liquor is an important intermediate product used to produce chocolate, cocoa butter, and cocoa powder.
 
5. Mixing, Refining, and Fine Grinding
 
When making chocolate, cocoa liquor is mixed with ingredients such as sugar, cocoa butter, and milk powder according to the product formulation. Fine grinding reduces particle size and gives the chocolate a smoother texture. The mixture is then refined to improve the integration of the ingredients while further developing the desired flavor and texture.
 
6. Tempering and Molding
 
After refining, the chocolate needs to be tempered. Controlled heating and cooling allow the cocoa butter to form a stable crystal structure. Properly tempered chocolate has better gloss, snap, texture, and storage stability. Depending on the product type, the chocolate is then deposited, molded, cooled, and packaged.

This separates cocoa butter from cocoa cake, which can then be further processed into cocoa powder.
